Spinach and Prosciutto White Pizza


I just started receiving emails from Panera.  (it's like we're bff's!)  Along with seeing what new seasonal items the cafe is serving, they also include a recipe to make at home.  I know it's a ploy to get you to buy some of the ingredients at the store/restaurant, but let's face it.  I love their breads so this is the perfect excuse to stop by!

I really liked this pizza, the flavors went very well together.  However, my family prefers pizza made with a red sauce or with fresh tomatoes, so the next time I make this, I'll probably invent my own twist and put fresh tomatoes and basil instead of the ricotta mixture.  This would be great served at a party since it looks (and smells) fantastic!

Spinach and Prosciutto White Pizza
from Panera

1 tablespoon olive oil
3 cloves garlic, minced
1/4 tsp red pepper flakes
1 bag (6 0z) spinach leaves
1/8 tsp black pepper
1 cup ricotta cheese
1/2 cup mozzarella cheese
1 tsp dried oregano
2 rounds Panera Bread Asiago Cheese Focaccia
1 1/2 oz sliced prosciutto, chopped into bite sized pieces

Preheat oven to 500 degrees.  Heat oil in a large deep skillet over medium heat.  Add garlic and red pepper flakes and cook for 1 minute.  Add spinach, tossing and cooking until it wilts, 4-5 minutes.  Season with a pinch of pepper.

Combine ricotta, mozzarella, oregano, and pepper in a bowl.  Spread over focaccia into the edges, patting into an even layer.  Top with spinach mixture, spreading it around as evenly as possible.  Scatter prosciutto over the top. 

Bake 10-12 minutes or until cheese softens and the crust browns and crisps.
Cut each pizza into six wedges.
