I saw a photo of these cake truffles at bakerella.com and thought I would try my hand at them. Although mine don't look professional, I thought they looked whimsical and cute.
I used carrot cake and cream cheese frosting to make the truffle. After putting them on a stick and then dipping them in either pink or yellow candy melts, I attached a 'flower' that was made with pastel candy corn and a pastel skittle. I put these 'flower arrangements' on the table for Easter dinner both as a decoration and a treat.
