Pizza with Prosciutto, Goat Cheese and Roasted Tomatoes

I love to make 'grown up' food.  You know, food with great flavors and ingredients.  It makes me feel like I'm fancy and a great chef, even though I'm happy most of the time with cold cereal. 

Anyway, you must try this pizza.  It was perhaps one of the best ones I've made ever (which is a very bold statement!)

Pizza with Prosciutto, Goat Cheese, and Roasted Tomatoes

1 cup grape tomatoes, halved
salt
cooking spray
1 lb pizza dough (I used store bought)
2 oz goat cheese, at room temperature
2 tablespoons pesto
1/4 tsp red pepper flakes
1 cup shredded mozzarella cheese
1/4 cup freshly grated Parmesan
2 oz prosciutto, sliced

Place pizza stone on the bottom rack of oven and preheat to 300 degrees.  Adjust another rack to the middle oven position.  Line a baking sheet with parchment paper.  Arrange tomatoes on the baking sheet.  Sprinkle lightly with salt and spray with cooking spray.  Bake for 30 minutes.  Remove tomatoes from oven and set aside.  Increase oven temperature to 500 degrees.

In a small bowl combine the goat cheese, pesto, and red pepper flakes.

Stretch pizza dough out on parchment paper.  Spread goat cheese mixture on dough.  Sprinkle with mozzarella, tomatoes, prosciutto, and Parmesan.  Slide the pizza onto the hot baking stone.  (be careful!)  Bake 8-10 minutes.  Let pizza rest 5 minutes before serving.
