Orange Berry Muffins



I made these muffins recently. I really like the citrus flavor mixed with the blueberries. Plus there was a really good amount of blueberries!

Orange Berry Muffins

Grated zest and juice of one orange
3/4 cup buttermilk (I used skim milk)
2 eggs
3 tablespoons honey
1 stick butter - melted and cooled
1/3 cup sugar
2 cups flour
2 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1 cup blueberries - fresh or frozen

Preheat oven to 400 degrees. Prepare 12 muffin cups.

Pour the orange juice into a measuring cup and pour in enough butter milk to make 1 cup. Whisk in the eggs, honey, orange zest, and melted butter.
In a large bowl, whisk the sugar, flour, baking powder, baking soda and salt. Add the liquid ingredients and mix until mostly combined. Add the blueberries. Divide the batter evenly among the muffin cups.
Bake 22 minutes or until done. Cool 5 minutes and remove from muffin pan.
