Over a year ago, I saw a recipe for great looking strawberry cupcakes on Good Things Catered. I've had nothing but great luck with recipes from this great website. For some reason, it took this long to finally make them. And I'm so glad I did. The cake is nice and light, but studded with pieces of fresh strawberries. The frosting, a cream cheese variety, has pureed fresh strawberries as well. It was the perfect ending to my mom's birthday dinner!
