So for the big red and white holiday I made you a cake...looks simple right?

Well, look at what's inside! (it's supposed to be a red heart)

I saw this tutorial on iambaker.net. Seriously, if you've never been to this site, you must visit! She makes the most amazing cakes and cookies! I can't lie, this cake was a beast to take on. I used boxed cake mixes (gasp, I know) to help speed up the process. It was a little nerve wracking to guess what the cake was going to look like since you really can't tell until you cut it open. But trust me, if I can do this, you can do this !

"Scabinger Hunts"

Recently Caroline has learned about scavenger hunts...or rather 'scabinger hunts' as she calls them. We pick a color and she goes around a couple of rooms and locates as many of those colored items and draws what she sees. Today's color was red. Each time she found something, like a pillow or blanket, she got more and more excited. I hope her excitement for discovery continues!

Apple-Cinnamon Streusel Bars

Here's a sweet treat that I made recently. I love anything with a streusal top, so when I saw this recipe, I knew I'd have to try it. I really like the texture of the bar, but it doesn't have a very strong apple flavor. If I were to make it again I would add either some fresh chopped apple or applesauce to the recipe.

Apple-Cinnamon Streusal Bars
found in the 2011 Better Homes and Gardens Christmas Cookie magazine
2 cups flour
1 1/2 cup oatmeal
3/4 cup sugar
2 tsp cinnamon
1 tsp ginger
1 cup butter, cut into 8 pieces
1 8-oz package cream cheese, softened
1/2 cup chopped dried apples
1/2 cup chopped walnuts
1/4 cup pure maple syrup
1/2 cup sweetened condensed milk
1 tsp cinnamon
1 cup powdered sugar
3-4 tsp milk

Preheat oven to 350.
To make crust: stir together flour, oats, granulated sugar, 2 tsp cinnamon, and ginger. Cut in butter until it makes coarse crumbs. Set aside 1 cup of crumb mixture. Press the rest into a 9x13 pan.
To make filling: beat cream cheese, apples, walnuts, sweetened condensed milk, maple syrup, and 1 tsp cinnamon. Beat until well combined. Spread evenly over crust. Sprinkle with reserved crumb topping.
Make for 35-40 minutes. Cool completely.
To make icing: stir together powdered sugar and milk. Drizzle over uncut bars.

One of Caroline's favorite things about South Padre was the morning we spent in Port Isabel. There was a pirate themed restaurant on the pier. On the pier there were different pirate statues which Caroline loved. (When I was her age I would have been terrified!)

I love how posing by a statue can totally make her day. (and she considers the photo of her and Nate to be the most beautiful photo taken during the vacation...go figure!)

Valentine's Day Craft

I'm banking on the fact that I don't think Nate will be checking the blog in the next week (if I'm wrong, sorry Nate!)

I've never been a creative gift wrapper. You know the type, each gift looks like it's been thoughtfully and lovingly wrapped. I'm more of a slap some paper on it and call it good.

This year I'm really trying for Valentine's Day. I saw this cute paper box in the Target dollar bin (love that area!) and thought it might be the perfect way to wrap Nate's gift.

Caroline has never stamped with an ink pad before so I thought it would be fun for her to decorate the box. Less is not more for this girl!

Sweet and Sour Veggie Dip

Here's a delicious little dip that we tried over New Years. It's so good that I made it for Super Bowl. It's a little salty and a little sweet - so good! We really like it with sugar snap peas, but it's also yummy with carrots and celery.

Sweet and Sour Veggie Dip

1 package cream cheese (I used the 1/3 lower fat kind
1/4 cup (guesstimate) sweet and sour sauce
1 tsp (guesstimate) soy sauce

Mix together and chill. Serve with cut up vegetables.

January Snow Project

I love love love getting to do fun art project with Caroline. So, since it was January (and typically full of snow) we made coffee filter snowflakes. I'm sure you all remember doing this in grade school.

Getting to open up each filter after cutting was like getting to open a present. Exciting every time!

Since we love to do things a little over the top (note the headband with the ponytail) we also water colored on each snowflake. (also fun and exciting)

After they were dry we made an indoor blizzard by hanging them with yarn on the pendant lights. Such a fun project!

Winter Wonderland

So it finally snowed here a couple of weeks ago. (bummer, but it was mid-January)
Caroline has been waiting to go sledding so she was happy to see the fluffy white snow on the ground.

Nate attached a sled to a 4-wheeler and pulled her around the yard. (**note, this is against everything that I grew up with, my mother did not think this was safe 30 years ago, so I do not think it is safe now. Although Nate assured me that going under 2 miles per hour isn't fast **)

I love how rosy her cheeks got while she was out enjoying her winter wonderland!

Glazed Orange Muffins

Okay, does anyone else love orange baked goods? (cookies, rolls, etc)

If so, this muffin is for you. It is delicious and quite orangey. Not only that, but with the glaze and sugar/zest topping, it looks quite fancy!

The recipe only makes seven muffins (and I used a larger muffin cup and only got six). So the second time I made them I doubled the recipe and they still turned out great. I found this recipe on the Pinch of Yum blog. Check it out - great looking recipes!

Glazed Orange Muffins

1/3 cup milk
3 tablespoons vegetable oil
1 egg, beaten
2 tablespoons corn syrup
juice of 1 or 2 oranges (about 1/3 cup)
1 cup flour
1/3 cup brown sugar
1 1/2 teaspoons baking powder
generous 1/4 teaspoon salt
glaze:
1 cup powdered sugar
2 tablespoons orange juice
sugared zest:
2 tablespoons orange zest
1/4 cup white sugar

Preheat the oven to 350. Whisk together the milk, oil, egg, corn syrup, orange juice, and a pinch of zest. Mix in the flour, brown sugar, baking powder, and salt until batter is just combined. Pour batter into a greased muffin tin and bake for 10-15 minutes, or until tops spring back when pressed.
For the glaze, mix the powdered sugar with the orange juice, adding 1 additional teaspoon of orange juice at a time to achieve the desired consistency.

For the sugared zest, combine zest with sugar and combine with your fingers until crumbly.
When muffins are done, cool completely before dipping tops in glaze. Once dipped in glaze, immediately sprinkle with sugared zest.

Let's have a Blizzard (with no snow)

One of Caroline's favorite Christmas gifts was a DQ Blizzard Maker (thank you Aunt Beckie and Uncle Aaron). Now I can understand the attraction. Growing up each Christmas I would want a snoopy snow cone maker. I never got one (and really never needed one...who eats snow cones in SD in the winter?!)

Anyway, since December 25 Caroline's been asking when we can make our blizzards. I've promised her that 'someday soon' we would. Finally after many weeks of anticipation, we finally opened the machine up.

Since one batch makes about a half cup, it's the perfect size for a little treat (when split among 3 or 4 people).

Caroline very carefully added the ingredients and mixed for about ten minutes. And she was rewarded with what she thinks is the best tasting ice cream EVER!

A promise and snow free days

Okay, so I know that I now have at least one loyal reader. Sorry Kate for the long delay in posts. Between moving, vacationing, pregnancy, etc, I've completely neglected this blog. Since it's February 1st, my goal this month is to post something every day. (granted it's a short month)

A few weeks ago, before we had any snow I remembered to bring my camera with me during one of our trips outdoors.

I love the fact that it was January and were able to play tennis/fetch with my brother's dog, Count.

Laying (or is it lying...) in the grass looking at the clouds has never been more fun either.

I am so thankful that while Caroline was in daycare she learned to pump her legs to swing. It is so much easier now! (worth every daycare dollar too)

You Heard it Here First!

On New Year's my family and friends decided to try their hands at making an Onion Calendar. I've never heard of such a thing before. But after Googling and researching, we thought we'd see if our Onion calendar would predict the rainy/snowy/wet months in South Dakota for 2012.

They got an onion from a cousin's garden (so it's locally grown) and sliced it into 12 cups. After sprinkling each with salt and waiting a couple of hours, it looks like NE South Dakota will be wet in January, May, and December 2012.

Nate has major doubts on our very scientific research, so we'll see how the year turns out! (trust me, if this is right you'll hear about it!)

House Building...

No, I'm not talking about us building a new home...

Over the holidays we put together a couple of gingerbread homes. Last year Caroline had little patience for the activity (and enjoyed sneaking the candies instead).

What a difference a year can make! Caroline got quite good at putting the frosting on the houses and really making them beautiful with gumdrops, sprinkles, and gumballs.

Rootin' Tootin' Birthday

I know it's about a month late, but I thought it was time to share some photos of Caroline's 4th birthday party. Since she's a cowgirl (although sometimes she thinks she's a cowboy) we had to use cowgirls and horses as a theme.

Everyone wore cowboy hats and the kids got to design their own bandanna.

Pin the tail on the donkey was a must-play game.

Chocolate cake with either mint or vanilla ice cream (along with trail mix and lemonade) was enjoyed by all.

Christmas Craft Day

My friend Heidi and I decided that we should get our kids in the holiday spirit. And what better way than to have them make some handmade gifts. So Garrett, Claire, Caroline, and friend Maria got together and crafted.

First up was popcorn snowmen. My aunt gave us this idea and they turned out adorable!

Then they made reindeer nose treats. They were absolutely delicious. But really, what's better than pretzels, rolos, and m&m's?!

Lastly they made some hot cocoa mixes. It was a powdery mess so no photos were taken...

All in all, it was a great craft day and the kids are so proud of their creations. I have a feeling that they will be big hits for Christmas!

While in Minnesota over the weekend visiting my sister and her fiance, Caroline got to spend time with her soon-to-be uncle Aaron.

Apple-Ginger Snack Cake

I absolutely love apple desserts! To be quite honest, it might be my favorite part of autumn and winter. While this cake was in the oven our whole house smelled amazing. So warm and cozy!

Apple-Ginger Snack Cake

found in September's All You magazine

1 cup chopped walnuts (I used only 1/2 cup)

2 cups flour

1 tsp baking soda

1 tsp cinnamon

2 tsp ground ginger

1 tsp salt

8 tablespoons (1 stick) butter, melted

1 1/2 cups sugar

2 eggs, lightly beaten

1 tsp vanilla

4 large apples, peeled, cored, and chopped

frosting:

6 oz cream cheese, at room temperature

2 tablespoons butter, at room temperature

2 tablespoons lemon juice

1 cup powdered sugar

1 tsp lemon zest (I omitted)

1/4 cup chopped crystallized ginger (I omitted)

Preheat oven to 350 degrees. Spray a 9x13 pan with non-stick cooking spray. Spread nuts in pan and bake until lightly toasted (5-7 minutes).

In a bowl, mix flour, baking soda, cinnamon, ginger, and salt.

In a separate bowl mix together butter, sugar, eggs, and vanilla. Add flour mixture. Fold in apples and walnuts. (batter will be thick) Spread in prepared pan and bake 45-50 minutes. Let cool completely.

To make frosting: Beat cream cheese and butter. Beat in lemon juice and powdered sugar. Fold in zest. Spread on cooled cake. Sprinkle with ginger.

Crazy Cake

My friend Heidi sent me another fun dessert recipe. I think she likes to find the strangest recipes for me to try! This one is no exception. It's pretty much a two ingredient cake that cooks in the microwave in one minute. We tried it over the weekend and thought it was tasty.

Crazy Cake

1 package angel food cake mix

1 package cake mix (I used chocolate)

Mix together and store in an air tight container.

When you want to make one serving:

Mix 1/3 cup cake mix and 3 tablespoons water together in a microwave safe bowl. Microwave for one minute.

This can be served with cool whip, ice cream, fruit, etc.

Lefse Day 2011

Each year, my dad's family (who are quite Swedish) get together for one day to make lefse for the upcoming holiday season. Growing up, this day was shrowded in mystery...

This year, since I'm now at home with Caroline every day, I asked if I could come and watch how lefse was made. I had every intention of standing in the background and watching how this time honored tradition is made. Instead, my cousin Kari (also a lefse newbie) and I were thrown into the kitchen.

I tried my hand at rolling out the potato pastry into very thin rounds. Caroline also got to try her hand at rolling.

Next was cooking it on the griddle. It was a little tricky rolling it out on the griddle without it tearing, but by the end, I got the hang of it.

I truly feel blessed to have been part of a little piece of Ogren tradition!

Last week my friend Alicia at La Famille posted about how she's going to get ready for Christmas this year. My mom and I saw these ideas and thought we'd try the Christmas Organizer. (we're both overly organized and a tad Type A)

So after gathering supplies we invited a couple of girlfriends over to get crafting/organizing.

I can't believe that it's already the end of October. Seriously, where did the month go? Here's one more fun activity that Caroline and I did to celebrate Halloween. Caroline was almost to young to do this snack/dessert. She lasted a couple of Nutterbutter cookie dips. She enjoyed putting the slivered almond "toenails" on the cookies. I bet you can't tell the ones that she took creative liberties with!

Witch Feet/Goblin Feet

1 package Nutterbutters

1 package green candy melts

1/2 package slivered almonds

Melt candy melts. Dip cookies in and lay on waxed paper. Put almonds on cookies to resemble finger/toe nails. Let dry and enjoy!

The Itsy Bitsy Spider

Caroline loved that it took many steps...painting, gluing on eyes, and poking pipe cleaners to create such a fun spider.

Banana Bread Pancakes

Do you ever buy bananas only to find that oops - a few have gotten ripe before you've eaten them? No- just my family??

In an effort to not make banana bread (who has time for it to bake for an hour) I decided to make some pancakes. A few weeks ago, my mom found this easy pancake recipe that tastes fantastic!

Note: We had some leftovers and found that they reheated quite well the following morning.

Banana Bread Pancakes

2 cups pancake mix (I use low fat Bisquick)

1 1/3 cup water

1/2 cup oatmeal

1 ripe banana, mashed (I used two, since that's what I had)

walnuts, optional

Whisk together the pancake mix and water. Stir in the oatmeal and banana. Cook on griddle.

Yummy (low fat) Cake

I got a fantastic cake recipe from my friend Heidi. She made it as a chocolate cake, but since it is an easy cake to make your own, I made mine as a lemon cake. It was so easy to put together and it tasted delicious! The best part...the serving size was huge!

Yummy Chocolate Cake

1 package (18-1/4 ounces) chocolate cake mix

1 package (2.1 ounces) sugar-free instant chocolate pudding mix

1-3/4 cups water

3 egg whites

FROSTING:

1-1/4 cups cold fat-free milk

1/4 teaspoon almond extract

1 package (1.4 ounces) sugar-free instant chocolate pudding mix

1 carton (8 ounces) frozen reduced-fat whipped topping, thawed

Chocolate curls, optional

In a large bowl, combine the cake mix, pudding mix, water and egg whites. Beat on low speed for 1 minute; beat on medium for 2minutes.Pour into a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 350° for 12-18 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

For frosting, place milk and extract in a large bowl. Sprinkle with a third of the pudding mix; let stand for 1 minute. Whisk pudding into milk. Repeat twice with remaining pudding mix. Whisk pudding 2minutes longer. Let stand for 15 minutes. Fold in whipped topping.Frost cake. Garnish with chocolate curls if desired.

Yield: 16 servings

Nutrition Facts: 1 piece (calculated without chocolate curls) equals 197 calories, 5 g fat (3 g saturated fat), trace cholesterol, 409 mg sodium, 35 g carbohydrate, 1 g fiber, 3 g protein.Diabetic Exchanges: 2 starch, 1/2 fat.

Creepy Chocolate Waffle Cookies

I recently made a batch of cookies for Caroline to take to school for her last day of daycare. Since it's getting close to Halloween, I thought I'd get in the theme of things.

Growing up my mom would make chocolate waffle cookies for special occasions (mostly Christmas) and they were always a kid favorite. I guess some things never change!

I didn't realize how easy they are to make. Seriously, in no time I had cookies cooling on my counter waiting to be frosted!

Chocolate Waffle Cookies

by Gertrude Schuller (found in the Claremont UMC cookbook)

1 cup butter or margarine

1 1/2 cup sugar

4 eggs

2 cups flour

3 squares chocolate

1 tsp vanilla

1/2 tsp salt

Frosting:

1/4 cup butter

1 cup sugar

1/4 cup milk

1/2 cup chocolate chips

Melt chocolate and butter. Beat eggs and sugar together and mix with the melted chocolate and butter. Add flour, salt, and vanilla. Mix well. Bake in a waffle iron for one minute (or until done). I used my small cookie scoop and got four cookies on the iron at the same time. Cool completely. Frost.

To make frosting:

Mix well together the butter, sugar, and milk. Bring to a boil and add the 1/2 cup chocolate chips. Stir until smooth and frost cookies immediately.

2011 Autumn Trip

Sorry for the extra long (and picture filled) post. Earlier this fall we went on a family trip to the Black Hills. It was Caroline's first trip out there and she was sure excited!

We rented a cabin at the High Country Ranch just outside of Hill City. We stayed in the Sunflower cabin which was more than enough room for us.

While we were there we went to Dinosaur Park (which I haven't been to since I was a little kid).

We rode the 1880 Train.

Visited Mt. Rushmore. (Caroline was busy doing official Jr. Ranger work while viewing the monument)

Toured Custer State Park.

Dipped our toes in Deerfield Lake.

And experienced Wall Drug. For the record, Caroline could have spent days there!

We had a great time and I can't wait to have more family vacations!

I know it's has been forever since my last post. With our computer oon the fritz again I'm having to write this on our iPod (not quite as easy).
As soon as the computer is up and running again I'll share photos from our trip to the Black Hills. Plus Caroline took some interesting photos from our nature walk (in our neighborhood). So for now I'll leave you with this...a recent art project that we did for preschool. I can't believe she can really use a scissors!

Chimichangas with Dipping Sauce

Here's another recipe from Nate's football party. I'm not usually a fan of frozen appetizers that just need to be reheated. But, the addition of the 'homemade' sauce made this recipe seem much more 'from the kitchen' instead of 'from the freezer aisle'.

Chimichangas with Dipping Sauce

1 (14 oz) bag of mini-chimichangas (I couldn't find these at my local Wal-Mart, so I substituted with taquitos)

1 (16 oz) container sour cream

2 tablespoons chipotleTabasco sauce

1 tablespoons chopped cilantro (I omitted since I didn't know how picky the eaters would be)

2 tsp cumin

Bake taquitos at 450 degrees for 15 minutes.

In the meantime, mix the dip ingredients and chill. Serve immediately.

Grilled Taco Chicken Pizza

A few weeks ago Nate hosted a fantasy football party in our garage. In hindsight it was a pretty easy party to get ready for. I served a variety of appetizers to the guys, and I made sure that they were all easy-to-make recipes. Here's one that was definitely a keeper! I think with the addition of more veggies it could easily be tweaked into a mid-week meal.

Grilled Taco Chicken Pizza

1 store bought pizza crust

2/3 cup salsa

2 (10 oz) package of cooked chicken breast (I only used one)

1/2 package taco seasoning

3/4 cup Cheddar cheese

3/4 cup Monterrey jack cheese

1/4 cup chopped tomato

3 tablespoons sliced green onions

Preheat oven to 400 degrees.

Spray baking sheet with non-stick spray. Unroll pizza dough on baking sheet. Bake for five minutes. Spread salsa on crust.

In a bowl combine the chicken and taco seasoning. Sprinkle over salsa. Top with cheese. Bake for ten minutes. Sprinkle with tomatoes and green onions.

S'More Bars

A few weeks ago, I decided to make a pan of bars that I saw on Two Peas & Their Pod. I don't think you can get more summery than a yummy s'more, so when I saw this recipe for Golden Grahams S'mores Bards I knew I needed to make them.

They were really easy to make and fantastic! But be warned, they are SUPER sweet! I didn't alter the recipe at all, so here's a link to make them at your home.

There is just too many people, too many (unsafe, in my opinion) rides, etc. But, because Caroline doesn't have this same opinion, Nate and I took her to ride the rides for one day. I hope one day she remembers this when she is choosing our nursing homes!

Nate was the lucky one to go on the Fun Slide with Caroline (and cousin Emmalee and friend Maria) over and over and over again!

Dirty Monkey Cupcakes

One of Nate's favorite treats when we go on vacation are the "Dirty Monkeys". It's a frozen chocolate banana rum drink. Quite delicious, and something we NEVER make at home. In August's All You magazine I saw a recipe for Banana Cupcakes with Chocolate Frosting and thought they might be fun to make when we have ripe bananas.

Today Caroline and I felt like baking, so I told her about these "Dirty Monkey" cupcakes. She thought they sounded hilarious so she became my number one helper. They turned out pretty well. I think they're a little sweet, so I would cut the amount of sugar (not by half, but close) the next time I make them.

Banana Cupcakes with Chocolate Frosting

Found in August All You magazine

2 cups flour

1 tsp baking powder

3/4 tsp baking soda

pinch of salt

1 stick butter, at room temperature

1 1/2 cups brown sugar

2 eggs

2 ripe bananas, mashed

1/4 cup plain yogurt

1 tsp vanilla

Preheat oven to 350 degrees. Line muffin tins (we made 12 regular size and about 9 mini).

In a bowl, sift flour, baking powder, baking soda, and salt. In a mixer, beat butter and sugar for about 3 minutes. Beat in eggs, one at a time. Beat in banana, vanilla, and yogurt. Stir in flour until just combined. Fill muffin cups about 2/3 full. Bake 15-20 minutes or until they test done. Let cool 15 minutes and then remove from pan. Let cool completely and then frost.

Chocolate Frosting:

4 oz chocolate chips

6 tablespoons butter, at room temperature

1 1/2 cups powdered sugar

1 tablespoon milk

1 tsp vanilla

Melt chocolate and let cool completely. In a mixer, beat butter and sugar until light (2-3 minutes). Beat in milk, vanilla and chocolate until smooth. Frost cupcakes.

No, I'm not entering Caroline in any Toddlers and Tiaras type of pagent anytime soon. But she received press-on nails and I finally broke down and put them on her.

By the way, she loved them. But they kept falling off. Apparently they haven't had many advancements in the press-on nail department since I was growing up. Caroline finally gave up and ripped them all off. I think tomorrow will be a mani/pedi day so she can have beautiful (natural) nails again.

A few weeks ago we went to Minnesota on a road trip. We went to Minneapolis and then ventured north (or that's what way I thought we were going...I was in the backseat).

Anyway, my parents took us to Lindstrom. It's such a cute Swedish town. Plus, the DQ is across the street from an awesome thrift/junk/treasure store that is only open one weekend each month. Seriously the things were amazing plus quite affordable!

Anyway, while we were there we went to the local church. And not just any church may I add. This church was built by my ancestors in the 1880's. That's a long time ago. It was pretty neat and humbling to walk in same church that 'my people' helped to create so long ago.

Big Day!

Today was a big huge day for Caroline. It was her first day of preschool. She was beyond excited about getting to bring her supplies and new backpack.

It was a little bittersweet for me, since it means that she's really no longer a baby. She's been making that point quite clear, but to see her at school (two mornings a week) makes it real to me.

Adventures in Dinner

Over the weekend we went to Minneapolis to see sister Beckie in a play. She was marvelous!

That night Caroline got to experience her first hibachi grill. The flames and fire made her a little scared.

But getting to eat with "a stick" more than made up for it.

Plus, I think we need to invest in these bowls and spoons. My typically fussy soup eater couldn't get enough!

A Before and After...

When we bought our house a year ago, one of the bedrooms had a painted mural on the entire wall. Even though the artwork was fantastic, it just wasn't our style. Plus, it made the room seem tiny!

Since there is no time like the present, I decided to paint over it and make the room a bit more neutral.

I think the room seems bigger and brighter now!

Kirby Science Center

Also while we were in Sioux Falls we got to check out the Washington Pavilion's Kirby Science Center. Since we were visiting the first Friday of the month, admission was free (score!)

I took a ton of photos, but the lighting was bad and my camera battery was dying, so these are the only ones that turned out...

What I loved most about the Kirby Science Center was that the activities were geared to kids of all ages. Caroline loved it (but didn't get into any of the science) AND Nate loved it (his inner science-nerd came out)! I see us coming back to visit more often as Caroline gets older.

Oh My Cupcakes!

Over the weekend we went to Sioux Falls to visit family. But of course a little extra dose of fun had to be thrown too. I had seen Oh My Cupcakes! website, and knew that someday we'd have to visit. This gourmet cupcake shop should seriously be on every one's 'must visit' list!

From the moment you walk in you are greeted with the glorious sugary-sweet aroma of cupcakes. There were over a dozen varieties. It was very difficult choosing. Luckily, they have two sizes - regular and mini. So we were able to pick a few mini-cupcakes to share.

We tried Cotton Candy, Razz My Berries, Lemon Drop, and Brunette. Caroline was all about the Cotton Candy cupcake. Well actually she was all about the frosting and sprinkles! I thought each cupcake cake had great flavor. Seriously the raspberry cupcake was unreal! If you're in Sioux Falls and looking for a fun treat you should really try Oh My Cupcakes!

Although there is plenty of in-store seating, we decided to take our treats to Falls Park - hence the name Sioux Falls. Caroline had never been to this park, and it's really changed since Nate and I lived there. We were able to walk around, go across the bridge, and climb (okay ride the elevator) to the observation tower. What a great way to spend the afternoon.

We decided to take Caroline on a family vacation this fall. To help her get excited for the Black Hills, we ordered her a vacation guide.

When it arrived today, she was excited.

Then she opened it and realized that it was just a magazine.

Raspberry Blondies

After reading the latest All You magazine (you know, the magazine with all of the coupons) and seeing this recipe, I knew the next time we had fresh raspberries I would be baking with them. I really like not only the contrast in flavors - a sweet blondie mixed with tart raspberries, but also the contrast in textures - chewy and crunchy.

Raspberry Blondies

found in the August All You magazine

1 cup flour

1 tsp baking powder

1/2 tsp salt

1 stick butter

1 cup brown sugar

1 egg

1 tsp vanilla

1/2 cup chopped nuts (I used almonds)

1 cup fresh raspberries

I also added 1/2 cup white chocolate chips

Preheat oven to 350 degrees. Line an 8 inch pan with aluminum foil.

In a small bowl, combine the flour, baking powder, and salt.

In a saucepan, melt butter. Add brown sugar. Let cool slightly. Off the heat, whisk in the egg and vanilla. Stir in the flour mixture. Add nuts (I added the white chocolate here too). Scrape batter into pan and smooth top. Scatter berries over batter. Bake until the blondies are set in the middle (around 30-35 minutes). Let cool completely before removing from pan and cutting.

Grilled Vegetable Pizza

When I saw a recipe for grilled vegetable pizza on Pioneer Woman, I knew we would have to try it! Caroline and I went to the Farmers Market after work and school and picked up a fresh zucchini. There is just something wonderful about picking up fresh produce every week!

I tweaked the recipe a little to make it a little easier (premade pesto) and quite honestly, it's one of the best pizzas I've ever tasted!

[as a side note, you may notice that a couple of slices are plain cheese with tomato sauce per Caroline's request. she seriously doesn't know what she's missing!]

Grilled Vegetable Pizza

by Pioneer Woman

1 pizza crust, I use Pioneer Woman's

Pesto (I used canned)

2 zucchini (I used one since it was pretty big) sliced thinly in diagonal slices

Olive Oil (for brushing)

Roasted red peppers (I used jarred to save some time)

12 oz fresh mozzarella (I used some shredded that I already had in the fridge)

4 oz goat cheese (I omitted since I didn't have any, but it would be delicious!)

Brush your zucchini slices with olive oil and grill. Prebake your pizza crust partially at 450 degrees. Spread with pesto. Top with zucchini slices and peppers. Top with cheeses and bake around ten minutes.

Tilapia on the Grill

In an effort to try a little healthier, I'm trying to incorporate more fish into our diet. For some reason, I'm not too keen on fish. I think it's the soft texture and strong fish taste (go figure, right) that turns me off.

But when I saw this recipe on Tasty Kitchen, I thought we would give it a whirl. And I'm glad we did. The entire family (Caroline included) liked it! It was simple to put together and in less than fifteen minutes we were ready to eat!

Tasty Tilapia on the Grill

4 pieces of tilapia

2 handfuls of Parmesan garlic croutons (crushed)

2 tomatoes, chopped

2 green onions, chopped

olive oil

a few shakes of Parmesan cheese

Coat the tilapia with olive oil. Top with crushed croutons, tomatoes, and green onions. Brush oil on grill. Grill fish until white and flaky. Serve topped with Parmesan cheese.

This weekend my mom and I headed to 'the cities' to meet up with my sister and aunt to go wedding dress shopping. Seriously, it was too much fun!

However, after a heavy rain Saturday morning we got to our dress appointment as the old saying goes - come he## or high water. Part of the highway was underwater and traffic was really backed up. But luckily we were in my mom's mini-van (love 'em) and made it through the current.

By the end of the day the dress (and accessories) were purchased. Mission accomplished!

I'm all about easy to make weeknight dinners. So, when my friend Heidi shared this recipe with me, I knew I'd have to try it. I'm not sure if Caroline would like the flavors, but Nate and I loved it! It's definitely a keeper!

Jamaican Jerk Turkey Wrap

2 cups broccoli coleslaw mix

3 T reduced fat coleslaw dressing

1 T prepared mustard

2 turkey breast tenderloins (I used turkey cutlets since that's what was available at the grocery store)

1 medium tomato, seeded and chopped

1 jalapeno, seeded and chopped

1 1/2 tsp Caribbean jerk seasoning

4 fat-free tortillas

In a bowl, combine the coleslaw mix, dressing, mustard, tomato and jalapeno. Mix and let set while preparing the rest of the meal. Season the turkey with the jerk seasoning and grill until cooked through. Let set a few minutes. Slice the turkey thin and put on warmed tortilla. Top with coleslaw mix. Wrap and enjoy.

Creamy Lemon Pie

As you may recall from previous posts on the matter, I love pie. Unfortunately it's not really the most healthy thing to eat. I did splurge and make the family this delicious treat over the weekend. I like how it's sweet and tangy and low in fat!

Creamy Lemon Pie

1 pre-made graham cracker pie crust

11 oz fat free sweetened condensed milk

2 eggs

1/2 cup lemon juice (I used bottled)

1 tablespoon lemon zest (I didn't have...so I didn't use)

Preheat oven to 350.

Mix milk, eggs, juice and zest together. Pour into pie crust. Bake 15 minutes. Cool completely and enjoy.

Cold Oatmeal

I'm a big fan of eating breakfast in the morning. And since I'm always up for trying new things, I thought I would try this recipe that I got from my mom who got it from a friend. I was a little sceptical at first...after all, oatmeal that you don't cook? Sounds suspicious to me.

I personally love this in the morning. It's comforting and quite filling. Plus, it takes just a couple of minutes to make at night. (Just a warning, Nate wasn't a fan of the texture of the oatmeal...)

Cold Oatmeal

1 cup vanilla yogurt (I use low-fat Greek)

1 cup oatmeal (dry)

1/4-1/3 cup milk (I use soy or almond)

Mix together - it should be soupy. Cover and refrigerate overnight. In the morning add berries, apples, raisin, or currents (if needed) and little more milk. I'm a big fan of fresh strawberries on top of mine.

Chicken Enchiladas with Red Chili Sauce

I can't remember where I found this recipe, but it's been stuck to my fridge (where I keep all new recipes until I try them) for a month or two. It's a good go-to recipe since most of the ingredients are found in my pantry on any given day. I tweaked the recipe so that it wouldn't be too spicy for my little lady.

Chicken Enchiladas with Red Chili Sauce
1 tsp vegetable oil
1 onion, chopped
salt and pepper
3 cloves garlic, minced
3 tablespoons chili powder
1 tablespoon cumin
2 tsp sugar
1 15-oz can tomato sauce
1 lb boneless chicken breasts, sliced thin
2 cups shredded cheddar cheese
3 tablespoons chopped pickled jalapenos (I omitted)
1/2 cup minced fresh cilantro (I omitted)
Preheat oven to 425 degrees. Grease a 9x13 pan. Warm oil in a pan over medium heat. Saute onion and salt for 8 minutes. Stir in garlic, spices and sugar. Add sauce and 1 cup water. Reduce heat and simmer for five minutes.
In a separate pan, cook chicken until cooked through. Season with salt and pepper. In a bowl, combine chicken and 1/4 cup sauce mixture (can also add jalapenos and cilantro in this step). Spoon 1/3 cup onto each tortilla and sprinkle with cheddar cheese. Roll up and lay seam-side down in baking dish. Mist with cooking spray.
Bake, uncovered, for 7 minutes. Reduce temperature to 400. Pour sauce over enchiladas and top with remaining cheese. Cover with foil and bake 25 minutes. Uncover and bake 5 minutes more.

We had another busy weekend as we celebrated the 4th of July and also my mom's hometown (Claremont's) 125th celebration. There was a parade (of course) and my family had a float. Since Claremont is baseball town (and my family loves the sport) we it as the theme for the family float. This week, however, I was able to just watch and help catch a lot of candy for the kids.

There was a lot of time for everyone to meet the newest member of the family, sweet Emma Grace. Caroline absolutely fell in love with her. In fact, I think she's going through some Emma-with drawls.

All in all, it was a great weekend. I'm so thankful for my family!

Engagement Party

We had a great time at my sister's recent engagement party. Here's just the dessert table - lots of delicious treats!

After people started going home, Caroline tried on another 'prairie girl' outfit. This one I think belonged to my grandma... Notice the pink boots - Caroline wore them all weekend long!

Papa Don later got out the horses and wagon and gave rides around the farm. It was definitely a highlight for the little cowgirl!

The Perfect Iced Coffee

It's no secret, I love to drink coffee. I used to think only 'old people' drank it in the afternoon, but I now find myself craving a little caffeine fix during this time. Certainly this doesn't mean that I'm getting older, does it? Anyway, I saw a recipe for Iced Coffee on The Pioneer Woman, and knew that I would have to try it. It really couldn't be easier to make, but be warned - it makes a lot! It tastes every bit as good as good ol' Starbucks...I think I found my new go-to summer drink recipe!

Iced Coffee

from The Pioneer Woman

1 lb ground coffee (I used a darker roast, per PW's suggestion)

8 quarts cold water

Mix together in a large container and let set for 8+ hours. Strain well - we used a fine-gauge strainer and coffee filters. It's a two-person job and can get a little messy - but be patient, it's worth it!

Chill and mix with ice and milk (or creamer) for each individual serving.

We're Off to See the Wizard

Over the weekend was my hometown's 125th celebration. We partook in many of the activities. Caroline and I went to see the community play "The Wizard of Oz". My mom and dad were Auntie Em and Uncle Henry. Plus, my brother played a general and a ghost. I was a little worried that it would be too long or too scary for Caroline, but it totally wasn't. In fact, she sat on the edge of my lap the entire time and was the loudest laughter! Afterwards, she got to try on the Auntie Em wig. I can not wait to take her to more musicals!

Ladies Who Lunch

As you may remember from a previous post, my hometown is celebrating their 125th birthday this weekend, so there are a lot of friends back in the area. My girlfriend, Christy, is back from Chicago so we had to get together for lunch and to catch up. Another girlfriend, Jen, joined us. It's amazing that we don't see each other for years, and are able to catch up like it's been just a few days.

I really don't think we've changed too much since high school...what do you think?

Frozen Peach Pie Fillings

One of my favorite things to make (and okay, if I'm being honest - eat) are pies. There's just something so homey and domestic about pulling a hot pie out of the oven. Each summer, usually in July or August, I buy a whole lug of Fay Elberta Peaches when they come to town. I make jam, desserts, and pie fillings from this that last the whole (long) winter.

I found my last filling in the freezer and decided to surprise Nate with a Father's Day pie. Enjoy!

Frozen Peach Pie Fillings

4 qt fresh peaches, sliced (fuzz removed)

3 1/2 cup sugar

1/2 cup and 2 tablespoons tapioca (the dry kind - not pudding)

1 tsp salt

2 tsp Fruit Fresh

1/3 cup lemon juice (bottled is fine)

In a LARGE bowl mix together the sugar, tapioca, salt and Fruit Fresh. Stir well. Slice the fresh peaches into this mixture and stir gently to coat. Add the lemon juice and stir again to coat. Line 3-4 pie plate with tin foil an fill with the pie filling. Free fillings until solid, then slip the fillings out of the pie plate and into a freezer bag. Freeze until ready to make your 'fresh peach pie'. Bake in a double crust pie shell, check your favorite cookbook for time and temperatures. Bake until the peach juice starts to bubble out of the steam vents in the upper crust.

The 125th...

My hometown is celebrating their 125th birthday (if that's what you call a town's beginning) this weekend. Caroline and my dad are planning on being in the parade and throwing candy. Caroline is super-excited about both of those things.

Over the weekend my mom pulled out an old-timey centennial dress. The dress was a costume she wore when she was little. As you can see it's a little big on Caroline but she loved it. Don't you think she looks just like Laura Ingalls?

After getting dressed up, Caroline had to go show my dad's dog Tippy.

After we were at Wylie Park fishing, we stopped at Storybook Land to walk around a little. Of course Caroline had to ride on the "caros-wheel".

Later she fed some pigs and rode her horse. I love that we can go there often and spend time.

With Nate leaving for a work trip on Father's Day this year, we decided to celebrate a day early. Nate and Caroline decided to start the day by going fishing. Luckily Wylie Park has a lake with fish, so we could go there and see if Caroline is a 'fish whisperer'.

She lasted a little while before she got bored and rode her bike.

Not too long after that, she got bored and laid down.

No sooner than she did that, but she got a bite. After the two of them spent about five minutes reeling in the nibble, they found out that she caught a 2-3 lb catfish! I don't blame Caroline for being a little scared - it was HUGE! It's safe to say that memories were made by all!

Grilled Summer Squash

I typically like all vegetables. I feel like I need to say that before I mention that I just don't like summer squash. I've tried it all sorts of ways, but I always find it lacking in the flavor department. This is, until I tried it a new way. I thought marinading it would help give the bland veggie some life, and I was right!

Cut summer squash and zucchini into small disks and put in a gallon size baggie. Add bottled Italian salad dressing and let sit for a few hours. Heat grill. Drain veggies in a colander to remove excess dressing. Put in grill basket and cook. Enjoy!

1 pkg broccoli coleslaw

2 pkgs Ramen noodles (chicken or oriental)

1/2 cup sugar (I use about 1/2 of this)

1/4 cup vinegar

3/4 cup oil (I use about a 1/2 cup)

Flavor packets from noodles

4 oz sunflower seeds

Crunch up the ramen noodles and mix with the coleslaw in a large bowl. In a separate bowl combine the sugar, vinegar, oil, and flavor packets. Pour over coleslaw mixture. Add sunflower seeds before serving.

A Summer Favorite!

One of the long standing summer traditions for Aberdeen residents is visiting The Twist Cone. This outdoor seasonal ice cream shop is a favorite of ours. In fact, we usually celebrate when we see it open in April. (I'm not sure if we're happy that it's open, or that it's almost summer).

Engagement Cookies

I'm helping my mom plan my sister's upcoming engagement party. We're all very excited about the party, meeting her fiance's family, and of course wedding planning. These cookies will be on the dessert table. Nothing too fancy, but I am using a new butter cream frosting recipe instead of the usual royal icing. I like the taste of this better, plus it's fun to use. For half of the cookies, I frosted very plain and later added Beckie and Aaron's wedding date. (my handwriting is atrocious!)

The other half I piped big free-form roses. You might remember seeing these roses on my mom's birthday cake. They are simple to make and I think the cookies look darling!

The butter cream frosting recipe I used is found on Karen's Cakes. I used the quick-crusting butter cream recipe.

Cousins

This past weekend we went camping at Wylie Park with my cousin Andi and his family. Their little boy, Carson, is the same age as Caroline and they have a great time together. Although the weather was a little cool, it made for some fun and very busy days.

Of course we went to Storybook Land but we spent most of our time at Wylie letting the kids ride their bikes and feed the ducks.

I can't wait for our next adventure!

Rhurbarb Dessert

With still more rhubarb left from my parents, I thought a little something sweet would be in order. I found this recipe tucked into my recipe box and thought I would try it. It's very easy to make and is very sweet. I served ours with sugar-free Cool Whip (the sweet dessert and cool whip cancel each other out, right?), but ice cream would also be good with this.

Rhubarb Upside Down Cake

5 cups diced rhubarb

1 (3oz) package strawberry jello

1 cup sugar

2 cups miniature marshmallows

1 box white cake mix

Spray a 9x13 pan with cooking spray. Arrange rhubarb in pan. Sprinkle jello and sugar over rhubarb. Top with marshmallows. Prepare cake mix as directed on package. Carefully pour cake batter over all and spread evenly. Bake at 350 for 50 minutes or until tests done. Turn cake only serving plate.

Bonzai!

Last summer Nate and I took the plunge and purchased a Bonzai water slide. (Okay, so I was very clearanced, like 70% off. Needless to say, it was a great deal - thank you Target!)

Today was the first day we got it out. I can honestly say, it's worth every penny. I can foresee many fun afternoons being spent in our back yard!

Caroline also had to get out her new kickboard and show us how it works.

Couscous Salad

I really like to make couscous. Maybe it's because it's one of the easiest things to make - less than seven minutes - or because it's kind of fun to eat. Anyway, I saw this recipe on the back of the couscous box and thought it sounded tasty. I was right! I like the fact that it's served cold and that it features a lot of vegetables. It's a great salad for a casual meal.

Zesty Greek Couscous Salad

from Near East couscous box

1 package couscous

1/4 tsp black pepper

2 tablespoons lemon juice (I used closer to 3-4)

3 tsp olive oil

2 large tomatoes, chopped (I used three)

1 medium zucchini, halved and thinly sliced

1/2 cup fresh basil, cut into strips (I forgot to buy this so I sprinkled some dried into it. It's much better with the fresh)

1/3 cup green onions, sliced

3/4 cup crumbled feta cheese

Prepare couscous according to package directions, except omit butter or olive oil and add black pepper with water.

In large bowl, combine prepared couscous, lemon juice and olive oil. Add tomatoes, zucchini, basil and green onions. Chill 4 hours or overnight.

Stir in cheese just before serving.

Serves 7 (generous servings)

Caroline and I recently went to Storybook Land to enjoy the nice weather. Luckily the rides and train were open! Surprisingly Caroline was old/big enough to ride on the carousel by her self. I'm not sure if I'm ready for her to grow up!

Luckily she still wanted to ride in the same train car as me.

Brownies

With a couple of meetings coming up at work, I thought I would surprise everyone and bring treats. Since EVERYONE likes chocolate, I thought that brownies would hit the spot. Instead of finding a recipe for exotic-sounding brownies, I went to my family's cookbook and make my aunt's. (She is the best cook I know!) I love the not quite fudgey not quite cakey texture of the brownies. And the frosting is simply fantastic! It's nice and smooth and super chocolaty!

Brownies

4 eggs

2 cups sugar

1 cup vegetable oil

4 tablespoons cocoa

1/4 cup hot water

1 tsp vanilla

1 tsp baking powder

1 tsp salt

1 1/2 cup flour

walnuts, optional (I omitted)

Bream the eggs and sugar together and then add the oil. In a small bowl mix the cocoa and water together and then add it to the batter. Add the vanilla, flour, baking powder and salt. Add walnuts if you wish. Bake in a 9x13 pan at 350 for 25-30 minutes.

Chocolate Frosting

1 cup sugar

1/4 cup butter

1/4 cup milk

2 tablespoons white corn syrup

1/2 cup chocolate chips (I used semi-sweet)

1/2 cup miniature marshmallows

Combine the sugar, butter, milk, and corn syrup in a saucepan and boil for one minute. Add the chocolate chips and marshmallows. Stir until melted and spreading consistency.

Rhuberry Jam

I really find the whole jelly-making process to be quite relaxing. It reminds me of when I was young and learning to make jelly at my grandma's house. It seemed to take all day, which is odd since it really doesn't take very long to make a batch of jelly.

With more rhubarb left, I thought I would try the Rhuberry Jam recipe that I found on Tasty Kitchen. It took quite awhile for the jam to come together, but wow - look at the vibrant color! The raspberry flavor really shines in this recipe.
